Alrighty, it’s time! I have FINALLY figured out how to make soft and delicious flour tortillas using 100% freshly milled wheat.

Flour Tortillas with 100% Freshly Milled Wheat
These tortillas are soft, easy to fold, and delicious! All made with 100% freshly milled wheat.
Ingredients
- 2 cups soft white wheat berries This is the BERRIES, not the flour amount. You will mill all 2 cups of wheat berries into a fine flour
- 1.5 tsp salt
- 1/2 tsp baking powder
- 1/3 cup lard can use shortening, but lard is my favorite!
- 1 cup hot water see note below
Instructions
- Mill 2 cups of wheat berries into a typical fine flour
- In a large bowl, combine 2 1/2 cups of freshly milled soft white wheat flour, baking powder, and salt. Mix together.
- Add to flour mixture 1/3 cup of lard. Using a fork, a pastry cutter, your hands, etc, cut in the lard until it resembles a coarse meal type flour.
- Once lard is incorporated, SLOWLY add a bit of hot water to flour/lard mixture until dough starts to hold together and pulls away from the bowl. You may need more or less than 1 cup of hot water, all depends on the wheat you are using.
- Once dough is holding together, it will look rough. Turn out onto a lightly floured surface and start to knead by hand until dough becomes smooth. This will take about 3-5 minutes.
- Divide dough into 10 balls. Roll balls until smooth and place on a place. Cover with plastic wrap and allow to rest for AT LEAST 30 minutes (see notes below)
- Once dough has rested, heat a comal, frying pan, etc to a high heat on your stove top.
- Lightly dust your work surface with flour, and roll out a ball of dough into a very thin circle. This will take practice! Make sure dough isn't sticking to rolling pin or your work surface. Dust flour as needed.
- You know tortilla is ready to be cooked when it has been rolled out thin and isn't tearing. Once tortilla is rolled out, place in hot pan.
- Wait about 15-20 seconds until you start seeing air bubbles in tortilla. Then flip tortilla over and cook for about another 15-20 seconds (see notes below)
- Once cooked, place in a towel lined basket and cover to keep tortilla warm. This will also soften up the tortilla even more!
- Continue to roll out and cook the rest of the tortillas. Once done, enjoy!
Notes
A few notes about these tortillas:
- You can allow your dough balls to rest even longer than 30 minutes. I find the longer they rest, the more soft they are! I have rested my dough balls up to 2 hours before with no issues. You can also rest in the fridge until you're ready to cook. Just make sure you allow dough balls to come to room temperature before rolling out and cooking.
- If your dough balls keep tearing when rolling the out, allow the dough balls to rest longer covered with plastic wrap.
- If your tortillas are getting too many dark spot while cooking too soon, turn down your heat.

Can you use a tortilla press successfully with this recipe?
I find when I press flour tortillas with a tortilla press, they bounce back and don’t maintain the size I am going for. If I was to do it in a press, I would use a larger press than I need. That way when the tortillas bounce back a bit, it’s the size I want.

Hello Felicia, I just have to tell you, since your making wonderful things from the grains of the Bible, why are you mixing it with lard? That is fat from pigs and God clearly said, pigs are unclean animals, we are not to eat unclean animals, and any fat as well from other animals that we can eat. So I pray that you will research that. But I do love your recipes.
What kind of lard do you use to make flour tortillas?
The only thing that comes to my mind is butter.

These were delicious! We have fajitas once a week and just made the switch to freshly milled grains. I was worried my family would miss the store bought ones. (I used to buy the raw kind that you have to cook on the stove so it wasn’t really that much extra to make my own). They came out perfectly soft! Most of them…ha I figured out that if my pan wasn’t hot enough they cooked too long in the pan and were a bit stiffer. So when my pan was the right amount of hot to get bubbles in 30 secs they were perfect! Thank you for this recipe! It makes me feel like we CAN do this. OH also I used butter because it’s what I had and it worked out great.
Glad to know the butter turned out well! And yes, you do have to figure out what temp your skillet needs to be on because it’s, unfortunately, different for every oven!
I wonder if beef tallow can be used in place of the lard.
I’m wanting to get my hands on some so I can try it! I actually have NEVER worked with tallow, so I don’t know how it would turn out.

You probably could, but I have never tried it. I wouldn’t use extra virgin though because that coconut flavor will come through. And so glad this has all been helpful!
Yes Felicia, From a Biblical perspective, Lard, Pig fat is from an Unclean animal which God forbids us to eat.. In fact God forbids eating even unclean meats if it is not Kosher prepared.. That is why I have given up meats, to live as God wants me to live. God created man to live on a plant based diet, but because the flood destroyed all the plant based foods, God allowed man to eat clean meats. But because sin corrupts, and man has gotten away from grass fed, natural fed and raised food animals, it’s hard to find any healthy meats we can buy in a store.. Cancers, health issues, dementia, Alzheimer, heart disease, obesity, can all be attributed to the foods we eat, including meats and dairy products.. It’s hard to change, but if God tells me how to eat for my health and immune system, then I must obey, otherwise I risk losing out on Heaven and eternal life.. God tells us how to eat, how to dress, not to wear makeup or jewelry, that we should exercise, and much more, but most of us never read, much less study our bibles, and if we do, we do what the sinful world does, not what God tells us to do.. God also tells us to keep His holy 7th day sabbath, the 4th Commandment, but because most protestants keep Sunday,a Pagan day of worship, we feel pressured Not to keep Saturday, but soon this will be the battle of Armageddon, a battle over who we worship based on what day we worship, the Mark of the Beast.. It’s not what day we worship on, but Who we Obey that matters.. Time is short, so we need to start Obeying our Creator and not Satan and the world..

Could hard red wheat be used?
Yes, but it will have a different taste.

Best recipe I have found yet. One commenter asked about using coconut oil. I used all unrefined, organic, coconut oil from Costco and they were to die for! I thought my husband wouldn’t like the “coconut” flavor as he has made negative comments when I have used it in place of other fats before, however, this morning he asked me to make more stating they were the best he’s ever had! And when I asked he in fact did not taste the coconut, nor did I! Great news for a healthier choice! I love the taste butter imparts also so today I am trying half butter, half coconut oil. I know, I’m one of those can’t leave well enough alone girls! Oh well! Thanks for a great fresh milled recipe Felicia!
This recipe sounds AMAZING!!!! If I was going to make a (big) batch and freeze them (for easy access on nights when I need something healthy quickly), would they defrost ok?? Would that not be recommended as far as nutrient loss?

These turned out pretty well. My tortillas are ‘brownish’ in color, though. I was wondering what brand of soft white you use.
I use soft white from a variety of places!
2 cups of wheat berries does not equal 2.5 cups of fresh milled flour. I’d love to have weight measurements instead. Any chance you can give some clarity there? I used all 2 cups of milled wheat berries (which equaled about 3-3.5 fluffy cups of flour) and they were definitely denser than I would have liked.
The recipe doesn’t say you will use all of the flour. You use 2 1/2 cups of soft white wheat flour for the tortillas, the rest is used for dusting when rolling out the tortillas. Feel free to mill a bit less next time, but just use 2 1/2 cups of soft white wheat flour.
Can you use OLIVE OIL in place of the lard?

The recipe turned out good but mine look nothing at all like your dad photo. Mine are the darker wheat color. What is the secret to getting that light color?
Different wheats will provide different colors. I find that soft white wheat will be a bit lighter, but kamut will be a bit more tan.
Can you please post a how to video for making these tortillas? I’ve made them a few times now and every time they come out flaky, dry and just fall apart (slightly improves each time though). I don’t know why I can’t figure these out…. but my family and I love using tortillas with meals so I’m determined.
In Texas HEB had butter tortillas and they are amazing, so butter probably works
This is the best fresh milled tortilla recipe I have tried. I used a 50/50 mix of Sonora white and khorasan, and lard! They are thin, soft and delicious! I appreciate that you have a metric option for measurement! Thank you!
