This was the best Cream of wheat ever! So creamy and a little lumpy, but we like the lumps! Simple satisfying without the bloat! I cannot believe i didnt do this sooner. We don't have the box cream of wheat and my husband said he wanted some for breakfast. I didnt have any and said I would get some, then I remembered my wheat berries. We used soft white! Perfect! So easy. This will now be my go to on cold winter morns.

Thank you so much for posting this recipe. I didn’t have kamut, so I milled soft white wheat on the coarse setting in my WonderMill, but the texture was just like on the bread setting, so cooking it ended up a roux texture, not like real cream of wheat. What am I doing wrong?

I see what went wrong!
Your converter did not work-
I clicked 2X and it said 2/3 cup berries for 2 cups of milled.

I had a soupy mess at first!
I milled another 2/3 cup of berries and whisked it in until it was thick.

Need to work on my grain size but it was pretty good.
My goal is to malt some barley so I can make malt-o-meal next.

Thanks!

Lately, I've been making our morning cream of wheat with Kamut (yum), freshly ground a little finer than grits. My measurements are 1 part Kamut berries (before grinding) to 4 parts water. Since Kamut takes longer to soften than soft white wheat, I simmer for anywhere from 10 to 15 minutes, or until I like the texture. Stir now and then to prevent sticking.

Then, into the pot, I stir in real maple syrup. Ladle some into each bowl, top with a poached egg, splash in a bit of milk, and we're go to go.

Lots of protein and fiber.
