I am trying to make a new style of bread with freshly milled grains just about once every week or so. I am doing all right thus far. Already made the simple yeast bread...yummo. And I just made the focaccia and man oh man, I am drooling just thinking about it. It is so sad to see people not attempt to try and use freshly milled grains. My sister does not have a grain mill but does have a high powered blender and is making due. Keep up the great work and thee equally great recipes.

This is a fabulous recipe! I had hard red and soft white on hand, and the recipe was great with these berries in the proportions indicated in the recipe. I let the dough cold ferment and also pressed several cloves of garlic to infuse in the topping oil, with both processes working overnight. Thanks for an easy and delicious recipe. Glad to add another type of bread to my developing FMF skills. Thanks again!

Hello,
I couldn’t find your stretch n fold technique video, so asking if I can just use my mixer to knead?
If I do, do I let it rise it per the recipe? Can I do a refrigerator overnight rise instead of the multiple rises?
Thank you for what appears to be a wonderful recipe for focaccia. Yum
