Southern Hoe Cakes
Ingredients
- 1 cup freshly milled corn, milled fine mill 3/4 - 1 cup of dried corn
- 1/2 tsp salt
- water
Instructions
- Mill your corn to make a fine corn flour.
- Add salt to freshly milled corn flour and whisk together
- Add enough water to flour mixture until it resembles pancake batter.
- Heat up frying pan with enough oil to lightly coat the bottom of the pan. Heat should be about medium. Don't let your fat smoke. If your fat is smoking, it's probably too hot.
- Scoop up corn batter and place in pan to make little cakes - however big you want them. Think corn pancakes.
- Fry on both sides until done (about 1-2 minutes each side). Hoe cakes should be slightly crispy on the edges, but still soft and done in the middle.
