Is this possibly a hummus hack??
I don’t know, but it is a different and faster way to make hummus if all you have are dried chickpeas!
Hummus with Freshly Milled Chickpea Flour
Use chickpea flour to make your own hummus!
Ingredients
- 2/3 cup dried chickepeas this will mill to about 1 cup of chickpea flour. Also known as garbanzo beans!
- 3 garlic cloves unpeeled
- 2 cups water
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1/3 cup olive oil
- salt and pepper to taste
Instructions
- Follow your grain mill's instructions and mill 2/3 cup of dried chickpeas (Garbanzo beans) to make a fine flour.
- Heat dry skillet over medium heat and cook unpeeled garlic for about 5-7 minutes until golden brown on all sides and softened. Remove from heat and allow to cool. Then remove the skins.
- In a medium pan, add 2 cups of water and 3/4 cup chickpea flour (you may have some left over from milling). Whisk together and bring to a boil. Once boiling add a pinch of salt and pepper.
- When chickpea flour mixture is boiling, lower heat to a simmer. Simmer for about 5-7 minutes until it has thickened up like a pudding. Stir frequently.
- When thickened, remove from heat and allow to cool. I usually place this in my freezer for about 30 minutes.
- In a food processor, add all of the flour mixture, peeled garlic cloves, tahini, lemon juice, and olive oil. Process until smooth and everything is incorporated.
- Add whatever other ingredients you like and serve! Although you can serve immediately, I do prefer to eat it the next day because it is much more flavorful!
Notes
To store: Place in a covered dish and store in ridge for about 3-4 days.Â

I made this recipe but added a little salt, pepper and cumin. It made restaurant-quality hummus. I quit buying hummus because of all the junk chemicals and canola oil in it, but now I have complete control with this recipe t and I made organic healthy quality hummus. I ate it with freshly milled whole grain bread and I can once again have the foods I love. Thank you for providing this.

I have a Nutrimill classic grain mill. Can I use that to mill the dried garbanzo beans? I used to make the air fried chick peas for a healthy snack with the dried beans but then they broke my dental crown while eating so I can use my unused beans for this recipe. I’m just not sure if I can use my Nutrimill Classic grain mill.
I’m not sure, it all depends on the opening. I can mill garbanzo beans in my Wondermill. You can definitely mill garbanzo beans in an impact mill it just depends if your opening is big enough for them.
