on this kamut is their only one rise ?is that because of the reg yeast I use instaferm yeast was told to do a 1 hour second rise most of all my dough are still sticky. should I not do a second rise ? do I just use it in the flour instead of the water to let it bubble ? on my quad island dry yeast I still let it do a second rise should I not do second rise ? I have thrown away a lot of dough ,getting discouraged .

Tried it today. So easy and quick to make. My entire family liked them. I was a bit sceptical as I only use grams, but it turned out great, even though my dough was not as tacky as yours when I look at your video. I have an Ankersum and only did half the recipe. The dough never really stuck to the sides of the bowl but was neatly running in a circle around the roller. I used 1 cup for the first rise then added 4 cups after and added another cup. The dough formed a ball, during the 9 minute kneading. It was tacky but was still easy to handle to shape 12 balls. Thanks for this recipe, going into fall I know that those rolls will be made very often for soups, stews and breakfast :)

In reply to <a href="https://grainsandgrit.com/kamutrolls/#comment-3675">Teresa</a>.

I assume it is so that you have enough flour ready in case you have to add more while mixing to make it the right texture; or to use when hand kneading. It is hard to say an exact amount of flour, it just depends on how it is coming together and if it needs more or less flour.

Is that why there is only one rise? I’m new to FMF as well. So far I’ve just made sandwich bread and the recipe calls for two rises.

Hello! Well I have tried many of your milled wheat recipes and this was the third roll recipe on my list to try. I used my Ankarsrum Mixer. Where i live in Georgia, we are at elevation 919 feet. (Have lived around the world and have watched how so many family recipoe cards , books with printed recipes and web based recipes around the world vary du to elevation, climate, season etc.

Even though we are closer to Florida in elevation than mother places we have lived, i still had to adapt a few tricks.

I do prefer to weigh my ingredients, started out life in Germany and metric measurement, with the use of a scale was important. Took a bit of time, but every move, I would make a new chart for standard measurements for basic ingredients. I too prefer it over the old cups and spoons of my maternal ancestors kitchen.

I found I needed more Kamut flour in the process and it still was sticky. I however did not shape the rolls on a floured surface. I found the olive oil surface easier to shape them and they cooked beautifully.

I purchased several of the Brod & Taylor plastic boxes for cold rising and storage of my rolls and found it works great for holding my 9x13 pan of rolls. in fact I use one of the boxes to share with my kids and they bring it back when they want more made.

But on to this recipe specifically. I really liked the outcome of these rolls even though they didn’t rise as high as other recipes, they remained moist, flavorful and the texture perfect for small sandwiches and with hamburger gravy!

I had three Brod & Taylor boxes full and each day… i find an empty box. LOL its only my hubby and I now and, well… send in the Pink Panther… ‘Where is that bread disappearing to?’

I am about to make a new batch. I’m curious to see if i over proofed it last time or not, but again it doesn’t matter.

Added note. My hunk a hunk a burnin love…aka my hubby, told me with all the interest in Milling your own and the fires on farmlands and such…maybe its a good Idea we purchase a couple big buckets of Kamut…. Your Recipe…a Winner Winner.

BTW: Ordered your book, it arrives next week. I predict it will be heavily marked up by end of the year! If ever heading up north on I-75, and are south of Atlanta, text me for a meet up!
