Bonus Recipe

This recipe is from a Pampered Chef recipe I learned about a decade ago.

Do not be turned away with no tomato sauce and no meat. This pizza is DELICIOUS and a perfect way to sneak in some veggies to the kids!

Veggie Mushroom Pizza (with Freshly Milled Wheat)

This is a recipe I adapted from Pampered Chef about a decade ago. Not only is there no meat, but the crust is made with 100% freshly milled wheat!
Don't be put off by the no-meat thing. Even kids love this!

Ingredients

  • 1 lb bread dough I use the recipe from my "Simple Yeast Bread Recipe (see notes below)". The recipe makes two loaves of bread. Divide bread dough and use one half to make a regular loaf, the other half divide in two. You only need 1 of these halves to make the pizza crust.
  • 2 TB olive oil
  • 2-3 cloves of garlic, minced
  • 1-2 zucchini, sliced thin
  • 4-5 roma tomatoes, sliced thin can use regular tomatoes, but roma tastes the best!
  • 1/2 lb sliced mushrooms
  • 2-3 cups shredded mozzarella cheese shred your own! Many times the shredded cheese from the store doesn't melt as well
  • 1-2 TB Italian Seasoning
  • salt, to taste

Instructions

  • Preheat oven to 450 degrees
  • Roll out bread dough onto pizza stone, baking sheet, whatever you like to use (I prefer stoneware). Keep bread dough THIN (no more than 1/2 inch thick). The crust is going to rise very well and you don't want it TOO thick. If needed, use more bread dough to get the right amount for your pan.
  • Place olive oil and minced garlic into bowl. Mix. When dough is rolled out onto your pan, brush oil and garlic mixture all over your pizza crust with a basting brush.
  • In a separate pan, saute mushrooms in about 1-2 TB butter (these are SO good, try not to eat them all). To saute mushrooms, melt the butter and cook the mushrooms until they are cooked (if using white mushrooms they will look brown).
You can omit this step HOWEVER, uncooked mushrooms will leak out more juice when cooking and make your pizza quite moist and soggy depending on how many mushrooms you use. To lessen the moisture, saute the mushrooms!
  • Time to assemble the pizza!
Place sliced roma tomatoes all over the pizza, then zucchini on top of that, then mushrooms on top of that (or whatever order you desire, it doesn't matter).
  • Cover pizza with shredded mozzarella. As much cheese as your heart desires.
  • Sprinkle top of pizza with Italian Seasoning and salt, to taste
  • Place pizza in preheated oven and bake for about 15-20 minutes until cheese is nice, melted, and bubbly and the crust feels cooked. Cooking time may vary based on how thick your pizza is.
  • Let rest for about 10 minutes, slice and ENJOY!

Notes

Feel free to customize this pizza to your liking! It is a wonderful way to sneak in veggies to your kids (don't tell them what's on it!)
