Baked Parmesan Potatoes

Ingredients

  • 6-10 red or yellow potatoes (russet potatoes can be used, but must be peeled. Red or yellow don't have to be peeled and they are lower on the glycemic index.)
  • 1/2 cup freshly milled flour (I usually use soft white wheat, but any mild tasting flour will do like spelt, hard white, or kamut)
  • 1/2 cup Parmesan cheese (can use powdered or freshly grated)
  • tsp salt
  • 1/2 tsp pepper
  • 1 stick butter

Instructions

  • Preheat oven to 425 degrees F.
  • While oven is preheating, place 1 stick of butter in 9x13 pan and place in oven to melt in the pan.
  • Cut up potatoes in bite size pieces or small wedges.
  • Combine flour, cheese, salt, and pepper in a bag or bowl.
  • Lightly moisten potatoes with water and toss in flour mixture thoroughly coating potatoes. If you prefer more cheese, add it!
  • Make sure butter is melted in 9x13 dish. Spread around to cover bottom and sides of dish.
  • Place potato mixture in 9x13 pan, place in 425 degree oven.
  • Bake for 1 hour, turning potatoes once halfway through baking.

Notes

These potatoes come out soft, yet crispy on edges thanks to the Parmesan. My family fights over the crispy edges! lol
This is a favorite side dish in our house. Even though it takes an hour to bake, it takes very little prep work.
All prep work can be done in advance, placed in fridge and baked in the oven close to mealtime!
