Black Bean Tacos

Ingredients

  • corn tortillas (Use my recipe to make them yourself!)
  • black beans (dried or canned)
  • salt
  • gloves garlic, peeled and sliced
  • avocados for guacamole
  • cilantro
  • onions
  • limes
  • salsa
  • monterrey jack cheese

Instructions

  • Allow a couple of hours for your dried black beans to cook. You can even do this on a crockpot, but I generally do it on the stove. Feel free to soak overnight, your choice.
  • Add garlic and salt to taste,
  • Cover with water until beans are covered by about 3 inches. Bring to a boil then simmer until done. Usually takes 2-3 hours for me. Watch the water levels.
  • Make your corn tortillas and have them finished 10-20 minutes before serving! You want them FRESH.
  • Make your guacamole. Just blend or mash avocados (or use a food processor) until nice and smooth, and salt to taste. Don't do this step until about 15 minutes before serving. Avocados oxidize pretty quickly!
  • Dice up cilantro; place in bowl for serving.
  • Dice up onions; place in bowl for serving.
  • Cut up limes; place in bowl for serving.
  • Make your own salsa, or have store-bought salsa in a serving bowl.
  • Grate your Monterrey jack cheese; place in bowl for serving.
  • When ready to eat, put a spoonful of beans onto your homemade corn tortillas. Add guacamole, cilantro, onions, salsa, cheese, and squeeze a lime over it and ENJOY!

Notes

These are filling and perfect for those Meatless Monday meals. But the key to these being amazing is guacamole. Do NOT skip this! It just won't be the same.
