Chicken That Makes its Own Gravy

Ingredients

  • 3-1/2 lbs boneless chicken breasts (I have used a whole, cut up, bone-in chicken with no problem)
  • 2-3 cups freshly milled soft white wheat flour
  • 1/4 cup butter, melted
  • 2/3 cup milk
  • 1 can cream of mushroom (can substitute cream of chicken)
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 4 oz canned mushrooms, drained (or use fresh, or omit completely)

Instructions

  • Preheat oven to 425 degrees F.
  • Coat chicken in freshly milled soft white wheat flour. (If you've never done this before, just place flour in a bowl and put chicken in and turn it over until the flour covers all of the chicken)
  • Pour melted butter in 9x13 pan (or whatever size you need) and arrange floured chicken on top.
  • Bake in preheated 425 degree oven for about 30 minutes.
  • After 30 minutes, turn chicken and bake until browned. About 15 minutes.
  • Remove chicken from oven. Reduce oven temperature to 325 degrees F.
  • In a bowl, combine milk, soup, cheese, salt, pepper, mushrooms and mix well. Pour over baked chicken.
  • Cover with foil and bake in the 325 degree oven for about 15-20 minutes.
  • Serve by itself, or over rice or mashed potatoes!
