I love this way to cook hulled barley! It is WAY faster than doing it on the stove top! If you have an electric pressure cooker, you can cook up a batch and save it over the next 3-4 days as needed.
Use this simple cooked barley as a replacement for rice! Use it in a stew, as a side, whatever you like!
Hulled Barley (Instant Pot)
Equipment
- 1 electric pressure cooker I have the 8 quart Instant Pot Duo
Ingredients
- 1 cup hulled barley
- 2.5 cups water stock can also be used
- 1 tsp salt
- 1 bay leaf (optional)
- olive oil or butter (optional)
Instructions
- Rinse hulled barley and allow to drain well
- Put drained barley in Instant Pot, add water or stock, salt, and bay leaf if using. Can add any additional seasonings you want here too!
- Close lid, make sure valve is set to "sealing."
- Set the Instant Pot to "high" and cook for 23 minutes.
- When time is up, allow to naturally release for 15 minutes then manually release the rest of the pressure.
- Open lid and fluff barley like you would rice. Add butter or oil to taste. Adjust seasonings as necessary.
Notes
Once cooled, place in fridge for about 3-4 days and use as needed. I usually double this recipe and when I do, I increase the cook time to 25 minutes!
