Ok, so if you’ve mastered the Dark Russian rye bread, made your homemade sauerkraut, and your German potato salad, this is the recipe to top it all over and put it all together!
This Rueben sandwich is AMAZING. Seriously. Your life will be changed.
That may be a tad dramatic….maybe..
The only thing that could make it better is if I made my own corned beef. So that’s my next goal!

Reuben Sandwich
Ingredients
Sandwich
- 1/2 lb corned beef
- ½ tsp olive oil
- 6 slices dark Russian Rye bread see notes for recipe link! You can also use regular rye bread
- 2 Tbsp butter room temp
- 1/2 cup sauerkraut drained - see notes to link for homemade sauerkraut!
- 6 slices Swiss cheese can also use Provolone, but swiss is traditional
Homemade Russian Dressing
- 1/4 cup mayo
- 1/2 tsp lemon juice
- 1 ½ tsp creamy horseradish
- 1 garlic clove minced
- ½ tsp Worcestershire sauce
- 2 tsp onion powder
- ⅛ tsp paprika
- Salt and pepper to taste
Instructions
- In a bowl combine all the ingredients for the Russian Dressing, set aside.
- In a skillet, over medium heat, add oil. Once hot, add the meat and cook just until heated. Meat is already cooked, you're just warming it up.
- Lightly butter one side of each slice of bread. Place the bread (butter side down) on a plate.
- Add the toppings to each sandwich: Spread the dressing, top with the meat, cheese and sauerkraut. Close bread slices to create a sandwich.
- In a hot skillet, cook sandwiches over medium heat 4-6 minutes, flipping once. Cook until cheese melts and the bread is lightly toasted - like your favorite grilled cheese sandwich, but better!
- Serve with some German potato salad or by itself and ENJOY!
Notes
Homemade Sauerkraut This pairs perfectly with my German Potato Salad! About the corned beef:
You can use canned corned beef, you can buy it from your favorite deli, or, if you have an Aldi nearby, their corned beef is DELICIOUS and a good price! Just follow the instructions on the package to cook it up.
