1lbsground beef (I have used 75%, 80%, grass fed beef, all different types. Use what you have, the difference will be in how much grease it will produce when baked)
1cupdried bread crumbs (can substitute 1 cup of quick oats if you don't have bread crumbs on hand, or make your own)
1/2cupdiced yellow onion
1/2cupmilk
1large egg, beaten
2tbspketchup
1tbspWorcestershire sauce
1tspdried parsley
3/4tspsalt
1/2tspgarlic powder
1/4tspblack pepper
Topping Ingredients:
1/4cupketchup
2tbsplight brown sugar or sucanat
1tbspred wine vinegar
Instructions
Preheat oven to 350 degrees F.
In a large bowl, add ground beef, bread crumbs, onion, milk, egg, 2 tbsp ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper.
Use hands to mush and mix all ingredients together until well combined.
Line a bread pan with parchment paper. I prefer to do this especially when using more fatty ground beef because it allows me to lift the meatloaf out of the bread pan easier after baking, thus reducing the amount of grease. This step is optional!
Add meat mixture to bread pan and pat down into an even layer.
In a small bowl, add the 1/4 cup ketchup, brown sugar, and vinegar.
Stir to combine and pour over the top of the meatloaf and spread into even layer.
Bake uncovered for 55 minutes.
After baking, allow meatloaf to rest for about 10 minutes before serving, otherwise it may fall apart.
You can serve meatloaf directly from the bread pan, or I like to pull it out (with the help of the parchment paper) and place on a nice serving platter. Serve up with peas, mashed potatoes and gravy, rolls, whatever you like!
