2cupswhite rice (either long grain or jasmine rice)
4cupswater (or 3 cups water, 1 cup chicken stock/broth)
Instructions
Dump rice in a sturdy pot. Add water.
Bring water to a boil, stirring rice as you go. My rice tends to want to stick to the bottom of my pot.
Once water gets up to a boil, it will start to foam. Watch it like a hawk. The foam will rise up and then come back down. When foam comes back down, turn burner to low and place lid on pot.
Cook for about 6-8 minutes - DO NOT TAKE THE LID OFF!
After 6-8 minutes, turn off burner and remove pot from heat source. Keep the lid on, do not open!
Let rice sit for about 10-15 minutes. Then open the lid.
Season as you like, dump it in a soup, serve it up with some butter, whatever you like!
Notes
I searched far and wide for a foolproof rice recipe. Finally, I found what Phil Robertson does, and it works every time. Those Cajuns know rice! The key for me was keeping the lid on and not placing the lid on the pot until the foam had gone down.
