5slicesbacon
1small oniondiced
¼cupwhite vinegarI sometimes do half apple cider vinegar and half white vinegar - or all apple cider vinegar. Your choice!
2tablespoonswater
1 ½tablespoonscane sugar
1teaspoonsalt
⅛teaspoonground black pepper
1tablespoonchopped fresh parsleyor about 1/2 TB dried parsley
Instructions
Place potatoes in a large pot and add water to cover by at least 1 to 2 inches; bring to a boil. Cook until potatoes are easily pierced with a fork, about 10 minutes. Drain, and set aside to cool. It's a potato salad - so cook potatoes the way you like them, but this is generally cooked where potatoes still hold their shape, but just soft enough to eat.
While the potatoes are cooking, place bacon in a large, deep skillet over medium-high heat. Fry until browned and crispy. You're basically making bacon bits, just not AS crunchy unless you like it that way. Transfer bacon to a paper towel-lined plate. When cooled slightly, chop up bacon or crumble into small pieces. Leave bacon grease in the skillet.
Cook onion in the bacon grease over medium heat until browned and soft about 6 to 8 minutes. Add vinegar, sugar, water, salt, and pepper to the pan and bring to a boil.
Once boiling, add potatoes, and 1/2 of the crumbled bacon. Cook until heated through, 3 to 4 minutes.
Transfer warm potato salad to a serving dish and sprinkle remaining bacon over top. Garnish with parsley to your liking. Don't skip the parsley because it makes the potato salad look so pretty! Serve immediately. German potato salad is best when it's served warm!
