2cupsmashed sweet potatoesfresh is best, but can use canned sweet potatoes
1/3cupbuttersoftened
1/2cupsugar
2large eggs
3/4cupevaporated milk
1tspvanilla
1/2tspcinnamon
1/2tspnutmeg1/3optional
1/4tspsalt
1unbaked pie shell
Instructions
Preheat oven to 425 degrees F
Add all ingredients in bowl (except pie crust) and mix well until smooth
Pour mixture in unbaked pie crust
Place in middle or lower third of oven at 425 degrees F. Bake 15 minutes.
After 15 minutes, turn oven temperature down to 350 degrees F and bake for another 35-40 minutes. Pie is done when toothpick comes out clean from the middle.
Place on cooling rack. Let rest for about 15-20 minutes before slicing.
Can be served hot or cold! Delicious cold with whipped cream!
Notes
If ingredients are not room temperature, it is normal for the butter to look like tiny little bumps when mixed. This is fine, it will melt in oven!
