Ingredients

  • 1-1/4 cups sugar plus about 1 tbsp for sprinkling
  • 2 cups freshly milled soft white wheat flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 2 cups whole milk (can use 1% or 2%)
  • 2 sticks butter, melted
  • 4 cups fresh or frozen berries (blackberries, blueberries, strawberries, combination, whatever). If using frozen berries, make sure they are FROZEN and not thawed. Otherwise they will come out mushy!

Instructions

  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, salt. Mix well.
  • Add sugar to flour mixture and mix well.
  • Stir in milk and melted butter. Mix until well combined. Should look like typical cake batter so, if needed, add a bit more milk.
  • Grease 9x13 dish.
  • Pour mixture into greased pan.
  • Distribute berries throughout the top. As it bakes, berries will sink further so you can add more berries as the cobbler cooks to keep berries on top.
  • Sprinkle 1/2 tbsp sugar over top.
  • Bake 50 minutes, remove and sprinkle remaining 1/2 TB sugar (feel free to add sugar to taste).
  • Bake 10 more minutes until top is golden brown.
  • Serve immediately (best with vanilla ice cream)!

Notes

Cobblers are such a staple in the South. This can be made with peaches too for peach cobbler!
