Ingredients: 6 apples, peeled and chopped; 2 tbsp sugar; 1-3/4 tsp ground cinnamon, divided; 1-1/2 tsp lemon juice ((keeps the apples from browning too much)); 1 cup brown sugar ((or sucanat)); 3/4 cup old fashioned oats ((bonus points if you roll them yourself!)); 3/4 cup freshly milled soft white wheat flour ((spelt or kamut can also be used)); 1/2 cup COLD, unsalted butter, diced into small cubes
