6apples, peeled and chopped (I have used all kinds of apples for this - Granny Smith, Red Delicious, use whatever you have on hand)
2tbspsugar
1-3/4tspground cinnamon, divided
1-1/2tsplemon juice(keeps the apples from browning too much)
1cupbrown sugar(or sucanat)
3/4cupold fashioned oats (bonus points if you roll them yourself!)
3/4cupfreshly milled soft white wheat flour (spelt or kamut can also be used)
1/2cupCOLD, unsalted butter, diced into small cubes
Instructions
Preheat oven to 350 degrees F.
Grease an 8x8 baking dish.
In one mixing bowl, add chopped apples, sugar, 3/4 tsp cinnamon, and lemon juice. Stir to combine and transfer to baking dish.
In another mixing bowl, combine topping ingredients - brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter.
Use a pastry cutter (you can do this in a mixer with the whisk attachment, but it depends on the mixer) to cut the butter into the topping mixture until mixture resembles pea sized crumbs (just like we do with biscuits and pie crusts).
Spread topping mixture over apple mixture in baking dish. Gently pat to even it all out.
Bake 45-50 minutes until golden brown and bubbly.
Enjoy with some vanilla ice cream or your own caramel sauce!
