Guilt-Free Brownies

Ingredients

  • 1 cup oil (don't use an extra virgin olive oil, your brownies will taste a bit like olives. I typically use peanut oil)
  • 1-1/2 cups sugar
  • 2 tsp vanilla
  • 4 large eggs
  • 1/2 tsp baking powder
  • 2/3 cup cocoa powder
  • 1/2 tsp salt
  • 1 cup freshly milled soft white wheat flour (mill about 1/2 cup of soft white wheat berries for 1 cup of flour)

Instructions

  • Mix all dry ingredients together and stir together with a whisk. Make sure there are no lumps and everything is combined.
  • Add oil, vanilla extract, and eggs. Beat with whisk or mixer until completely smooth.
  • Pour batter in greased 9x13 pan and bake in a preheated 350 degree oven for about 14-17 minutes.
  • Check to make sure brownies are just starting to pull away from the side. Poke a toothpick in the middle of brownies. If it comes out clean, brownies are done.
  • Let brownies cool completely on a cooling rack. I know it's hard to wait. But this is what helps the brownies to set and not fall apart or be under-cooked!
  • Cut into squares and enjoy!

Notes

When I want thicker brownies, I bake in a 8x8 baking dish at 325 degrees for about 20 minutes until it's pulling away from sides and toothpick comes out clean.
