1cupoil (don't use an extra virgin olive oil, your brownies will taste a bit like olives. I typically use peanut oil)
1-1/2cupssugar
2tspvanilla
4large eggs
1/2tspbaking powder
2/3cupcocoa powder
1/2tspsalt
1cupfreshly milled soft white wheat flour (mill about 1/2 cup of soft white wheat berries for 1 cup of flour)
Instructions
Mix all dry ingredients together and stir together with a whisk. Make sure there are no lumps and everything is combined.
Add oil, vanilla extract, and eggs. Beat with whisk or mixer until completely smooth.
Pour batter in greased 9x13 pan and bake in a preheated 350 degree oven for about 14-17 minutes.
Check to make sure brownies are just starting to pull away from the side. Poke a toothpick in the middle of brownies. If it comes out clean, brownies are done.
Let brownies cool completely on a cooling rack. I know it's hard to wait. But this is what helps the brownies to set and not fall apart or be under-cooked!
Cut into squares and enjoy!
Notes
When I want thicker brownies, I bake in a 8x8 baking dish at 325 degrees for about 20 minutes until it's pulling away from sides and toothpick comes out clean.
