Have those family recipes that call for a box of Jiffy Corn Meal mix?? But you’re not milling your grains!! So what do you do?
Never fear! This recipe is a great substitution for that box of Jiffy and you can make it..well…in a jiffy! ha!
This recipe uses freshly milled corn AND freshly milled wheat.
This is not what I use for cornbread. I do that differently. If you’re wanting my cornbread recipe with freshly milled corn and wheat, you can check that out here.Â

Do you add water?
Whatever recipe you use for the Jiffy corn meal mix, whatever it calls for is how much I add. This recipe is just the dry mixture like you would buy at the store.
I don’t buy jiffy meal. Do you have recipe to make muffins with this recipe?
You should just be able to use any Jiffy Mix recipe but use this in place of the mix instead! Here is their corn muffin recipe: https://www.jiffymix.com/recipe/honey-corn-muffins/
There are certain recipes that I wanted to try, but didn’t, as they called for using the box cornbread/muffin mix. Thanks for coming up with a solution! Now, to see if I can find those recipes again.
I’ve never milled corn before. Do you need a special mill? Has anyone used their Nutrimill to do this? Thanks in advance.
I mill up dried corn in my Nutrimill and Wondermill no problem!
This is a recipe I needed! I milled some corn and it came out too fine. It appears that the WonderMill doesn’t really do a coarse grind. I think I”m going to make some corn muffins today!
