Have those family recipes that call for a box of Jiffy Corn Meal mix?? But you’re not milling your grains!! So what do you do?

Never fear! This recipe is a great substitution for that box of Jiffy and you can make it..well…in a jiffy! ha!

This recipe uses freshly milled corn AND freshly milled wheat.

Jiffy Corn Meal Mix Recipe with Freshly Milled Grains

Ditch the boxed Jiffy Corn meal mix! Mill your own flour and corn for the best! This recipe replaces 1 box of Jiffy Corn meal mix.

Equipment

  • 1 Grain Mill

Ingredients
 
 

  • 2/3 cup freshly milled soft white wheat flour mill about 1/2 cup of soft white wheat berries; see notes
  • 1/2 cup freshly milled corn flour mill about 1/2 cup of dent corn, fine; see notes
  • 3 TB sugar
  • 1 TB baking powder
  • 1/4 tsp salt

Instructions
 

  • Mill your flour and corn. Dump all ingredients into a bowl and mix with a whisk
  • Use in place of 1 Jiffy corn meal box called for in a recipe

Notes

Notes on milling corn:
I only mill dried dent corn. I do not recommend milling popcorn because some grain mills cannot handle it. If you're buying dried corn from a place, most likely it is dent corn! 
Dent corn is larger than wheat berries. You may need to adjust the settings on your grain mill to accommodate the bigger size while still milling the corn into a fine flour. 
Notes on milling flour:
In the recipe, when I say "flour" I am referring to the flour that you have already milled and NOT the amount of whole wheat berries or whole corn.
